Stuffed Crescents with Mung Bean Filling

Chef Roongfa made this lovely Thai dessert yesterday..it was so delicious! They called it "Kha Nom Thua Paeb" or Stuffed Crescents with Mung Bean Filling in English :) She made three different colours: there's green (pandan), orange (carrot) and yellow (pumpkin). The outer layer is made out of glutinous rice flour mixed with pandan juice, carrot juice and pumpkin juice to make different colors then filled with Mung Beans.
